Timberline – Crested Butte
One of todays most highly regarded chefs in Crested Butte, Tim Egelhoff has received critical acclaim for his signature New American Cuisine, a style which reintroduced classic European cooking using American artisanal products, produce and techniques.
Beginning with the opening of Timberline in 1989, Tim has utilized his creative spirit to establish and grow an impressive restaurant.
Born and raised in Denver and self-taught as a chef, Tim has been in kitchens since the age of 15. During his college career earning his Bachelors degree in Biology and Chemistry, Tim cooked in nearly every restaurant in Crested Butte while living the mountain lifestyle inherent of this area. Not satisfied with the future of Gunnison County in the early 80’s, Tim moved to Colorado’s Front Range for a larger cooking experience and apprenticeship.
California’s central coast was the next stop in Tim’s culinary education. As Sous Chef at Crème Carmel Restaurant in Carmel, the enthusiastic clientele, unlimited produce, and fresh Monterey Bay seafood ignited the spark of world class cuisine. Being in the company of and working along side world class chefs, wineries, winemakers and restaurateurs were the ultimate schooling for a self-taught chef.
Today, Tim’s desire is to continue the mountain lifestyle with his young family and continue to create world class cuisine in Crested Butte. There is nothing like cooking behind the line, sharing the exhilaration of a great bike ride, or powder day while working with great food and inspiring the standards of my palate."
